 Carrot Cake Overnight Oats


I hope you are ready for a change because today I have a new recipe for your night oats! The recipe is very similar to some of my oatmeal recipes for the night, but with carrot cake spin.


Healthy inspired recipes for breakfast like the one I love because they feel so relaxed. I have a lot of dessert-inspired breakfast recipes like these oats for dinner night, carrot cake smoothie, oatmeal birthday cake and chocolate-baked oatmeal.

Ingredients Needed Carrot Cake Night Oats

old oats - rolled oats are best for oats at night. Fast / quick oats and steel cut oats do not work well because they do not absorb liquids in the same way as rolling oats do. My favorite type is Bob's Red Mill gluten free roasted oats.

almond milk - I like to use almond milk without vanilla, but any type of milk (milk or non-milk) will work.

minced carrots - they can't have a carrot cake overnight without carrots! I love the health benefits of carrots. Besides being sweet, they are high in antioxidants, fiber, vitamin K and potassium.

dried - with a little sweetness. If you are not a fan of raisin, feel free to skip it!

maple syrup - pure maple syrup is a perfect natural sweetener that you can use because it is a liquid so it blends well with oatmeal and I personally love the taste. Honey or another natural liquid drink will work here. If you want to reduce sugar in this recipe, feel free to use another form of sugar like stevia or monk fruit.

  • cinnamon - for a little spice.
  • vanilla extract and almond extract - these options, but they add so much good taste!
  • coconut flakes without sugar - this is also a choice, but the addition of coconut peas is great with cinnamon and oats. We highly recommend!
  • chopped walnuts or pecans - filling. I like the extra crunch the nuts add to the oats.


How to Do It

The night oats could not have been easier! All you have to do is combine all your ingredients (except ingredients) in a bowl or pot of march, mix, cover and refrigerate overnight or at least for a few hours.


The next morning, take your night oats out of the fridge, make the mixture stir and garnish with your favorite ingredients. At this point, do not just dig in as the night oats are made for cold eating. See my note below if you are not keen on eating cold oats.


Top ideas

This is the fun part! There are many options for adding flavor. Here are some of my favorites:


  • Chocolate chips - carrot cake + chocolate = best combo!
  • Sliced ​​bananas - one of the things I will take with me at night oats.
  • Peanut butter - we’ve already added nuts to the top, but you can’t go wrong with an extra drizzle of peanut butter!
  • Raisins - spray more raisins more to get more flavor.
  • Coconut husks - add the scattered coconut on top to get more soluble.
  • Granola - another great way to add crunch to your oats at night! I love my hemp granola.
  • Ice Cream Cream - Sprinkle with homemade cheesecake to make things worse!


How to Add Protein

My secret to filling oats at night is protein intake! If you feel hungry after just oatmeal, try adding protein. I like to add a little protein powder or Greek yogurt to this mixture. My favorite type of protein powder is Nuzest! Use the bird feed code with a 15% discount on your order.


How Long Does a Night Oats Need to Be Soaked?

Given the name, you may think that oats at night need to be soaked at night, but you can make them in 2-4 hours when you run. Although it takes time for oats to absorb liquids, they do not need to be soaked overnight, especially since they do not contain chia seeds.


I recommend at least 8 hours with real night oats, but it was in the morning that I decided I wanted oats at night to eat breakfast even though I hadn’t prepared them the day before. If this happens, I will make them in the morning and let the oats soak for only 2-4 hours. With this quick immersion, they are not as soft as the late-night oats and have more liquid, but they are still delicious.


Can You Eat Hot?

Short answer, yes! You can warm the oats overnight, but the whole point of oats at night is to eat them as cold as muesli. Even if you think cold oats sounds weird, I recommend you shoot it before you write it. Of course, as long as you can make cold oats you can always burn them. Just put the oat overnights in your microwave, cook for 30 seconds until the oats are warm and enjoy.


How Long Is Oats Overnight?

If stored in an airtight container in the refrigerator at night the oats should be stored for up to 5 days. They will be much softer if they stay longer so I find that they are much better in 1-3 days, but they are still safe to eat in 4 and 5 days. With that being said, night oats are good for food preparation. Feel free to make a whole week-long collection on Sunday. I like to put them in a wide mouth 16 oz sin pots.
