Apple Pie Overnight Oats

Ingredients Needed In Apple Pie Overnight Oats
Fried oats - Fried oats are the best oats at night. Fast / quick oats and steel cut oats do not work well because they do not absorb liquids in the same way as rolling oats do.
apples - the star of the show here. I love using Honeycrisp or Pink Lady apples, but any variety will work!
milk - I like to use sugar-free almond vanilla milk, but any type of milk will work.
yoghurt - you can use regular or non-dairy yoghurt. I like to use plain, but I recently tried to use Siggi vanilla & cinnamon yogurt in this recipe and it was amazing. We highly recommend!
maple syrup - pure maple syrup is a perfect natural sweetener that you can use because it is a liquid so it blends well with oatmeal and I personally love the taste. Honey or other natural liquid sweetener will also work. If you want to reduce sugar in this recipe, feel free to use another form of sugar like stevia or monk fruit
- vanilla - just a touch of extra flavor!
- cinnamon - or apple spice.
- Cinnamon Apple Topping
The most important part of this recipe (in my opinion!) Is cinnamon apple topping. Extra step but 100% worth it! Here's what you do:
Cut your apples into biting pieces.
Combine apple slices, maple syrup and cinnamon in a small safe microwave bowl. Stir together to coat the apples.
Preheat in the microwave for 30-60 seconds or until the apples are a little soft and look like baked apples.
Overnight Oats Rating
The basic "recipe" for oats at night is very simple! The hardest part is finding the right amount of oats and liquids. I aim for a 1: 1 ratio of oats wrapped in milk, and half a lot of yogurt. So for 1/2 cup of oats, I use 1/2 cup of milk + 1/4 cup of yogurt (or 1/4 cup of extra milk). This seems to give the oats a perfect consistency, not too thick, but not soup. For liquid, I usually go for non-dairy milk like almond milk, but you can use any milk you have and if you really want to test you can try using a different liquid as fruit juice.
How Long Does a Night Oats Need to Be Soaked?
Given the name, you may think that oats at night need to be soaked at night, but you can make them in 2-4 hours when you run. Although it takes time for oats to absorb the liquid, it does not need to be soaked overnight.
I recommend at least 8 hours with real night oats, but it was in the morning that I decided I wanted oats at night to eat breakfast even though I hadn’t prepared them the day before. If this happens, I will make them in the morning and let the oats soak for only 2-4 hours. With this quick immersion, they are not as soft as the late-night oats and have more liquid, but they are still delicious.
How Long Does Oats Overnight Last?
If stored in an airtight container in the refrigerator at night the oats should be stored for up to 5 days. They will be much softer if they stay longer so I find that they are much better in 1-3 days, but they are still safe to eat in 4 and 5 days. With that being said, night oats are good for food preparation. Feel free to make a whole week-long collection on Sunday. I like to put them in a wide mouth 16 oz sin pots.

- Cinnamon Apples
- 1/2 cup chopped apple, about 1/2 large apple
- 1 teaspoon maple syrup
- a bit of cinnamon
- Oats at night
- 1/2 cup of old oats
- 1/2 -3/4 cup of unsweetened vanilla milk, almond, cashew, coconut, etc.
- 1/4 cup Greek yogurt or coconut yogurt
- 2 teaspoons maple syrup, honey or sugar you like
- 1/2 teaspoon vanilla
- 1/2 teaspoon cinnamon, or apple pie spice
- ointment: cinnamon apples, peanut butter, chopped nuts, chia or hemp seeds
Instructions
Prepare cinnamon apples: Place sliced apple slices, maple syrup and cinnamon in a small safe microwave bowl. Stir together to cover the apples. Heat for 30 - 60 seconds, until the apples are a little soft and look like baked apples. Allow to cool and store 1/4 cup of apples to use as a topping.
Combine the remaining ingredients: Add the oats, milk, yoghurt, maple syrup, vanilla and cinnamon in a lid (jar jar works well!).
Add the apples: Add 1/4 cup of cinnamon apples to the oat section and fold. Close the lid on the pot and move the mixture slightly.

Refrigerator: Refrigerate overnight (or just 30-60 minutes if you do this in the morning).
Serve: Remove the lid from the pot, add extra yoghurt or almond milk if the mixture looks too thick. Top with 1/4 cup apples and a favorite oat toppings dinner. I like to add peanut butter or chopped nuts.
