Oatmeal Breakfast Cookie

What you need
- bananas - instead of using any fat or eggs to hold this cookie together, we use bananas! Make sure your banana is ripe and easy to digest.
- oats - oats are naturally gluten-free but may be contaminated during processing so be sure to catch gluten-free oats if needed. My favorite type is Bob's Red Mill gluten-free fashioned oats classic.
- baking powder - to help the cookie rise slightly.
- cinnamon - a perfect blend of spices.
- maple syrup - pure maple syrup is a perfect natural sweetener that you can use in my opinion!
- chia seeds - helps to combine cookies together and add healthy fats and fiber.
- almond butter - any nut or seed butter works. Check the ingredient label to make sure it is already nutritious (or seeds) and salt.
- berries - I recommend using fresh berries!
How to Make a Morning Cookie
Are you ready for one dish recipe? I don't know about you, but I'd love to have a few dishes to clean!
In a medium bowl, combine all the ingredients waiting for the blueberries! You will need canned bananas, oats, baking powder, cinnamon, maple syrup, chia seeds and almond butter.
Once combined, cover the baking sheet with parchment paper or silicone baking mat and add the dough to the baking sheet. Using your hands or spoon, cut the mixture into one large cookie, about 1/4-inch in size.
Bake at 350ºF for 16-18 minutes. The cookie does not rise or spread very well, but you will know that it is made when it is golden in color and firm when touched rather than soft.
Varieties of Flavor
Once you are familiar with this basic recipe, the options are endless! Here are some ideas:
Swap Bananas - If you are not a fan of bananas you should be able to easily switch to peeled bananas with applesauce, mashed potatoes or pumpkin puree. I have not tried this variety and some may be a little wet so you may need more oats. Let me know in the comments below if you try any of these replacements!
Swap berries - are you in a position to get different berries? Replace blueberries with any other berries!
Add chocolate chips - you can't go wrong with adding chocolate chips or using chocolate chips instead of blueberries! I recommend Lily's chocolate chips as low in sugar and calories.
Add the crushed coconut - if you are a coconut lover, add some shredded coconut or coconut flakes.
Add nuts or seeds - for extra crunch, add chopped nuts or seeds. Almonds, cashews, pecans, sunflower seeds or pumpkin seeds can all be delicious!
Add dried fruit - add extra flavor and texture to dried fruit. Try to get dried fruit without added sugar.
Protein - do you want more protein boost? Feel free to add protein powder or collagen powder. I suggest you start with 1 teaspoon at a time and you should live without adding extra fluids!
How to Make Breakfast Cookie

Ingredients
- 1 banana, activated
- ½ cup oats
- ¼ teaspoon of baking powder
- ½ teaspoon cinnamon
- 1 teaspoon maple syrup
- ½ spoon chia seeds
- ½ A tablespoon of almond butter
- 8-10 berries
Instructions

Preheat the oven to 350F and place on a baking sheet with parchment paper or silicone mat.
Slice the bananas in a mixing bowl.
Add all the remaining ingredients, except the blueberries to the mixing bowl and stir the mixture.
Add the mixture to a prepared baking sheet and make a large circular cookie.
Slightly push the blueberries over the cookie.
Bake for 16-18 minutes or until the top looks golden brown.
